What actually causes hunger?

I've noticed that after a heavy workout, even though I have a post-workout shake immediately after, within an hour or so my stomach is screaming to be fed.

Although not new, I've only started to wonder "why"?

Google led me down the path of poverty and societal issues, which I'm fairly sure are not at play here.

So, what actually causes physical hunger? Is it lack of volume in the stomach? Lack of nutrients? Rapidly-digested food post-exercise?

Something else?
